Today was the first day back at school for 2 of my 4 kiddos. We have tried to start a tradition of a fun, healthy breakfast and a fun card to kick off the school year with a positive vibe. This year’s breakfast choice was a Back to School Yogurt Parfait Bar. We have found that this is something very simple to put together and you can use whatever you have available in your fridge or pantry. You can dress it up or dress it down, depending on the occasion. For our yogurt parfait bar, we used some of our favorite things:
- Rice Krispies
- Trader Joe’s Non-Fat Plain Yogurt
- Trader Joe’s Lowfat Granola Cereal – Mixed Berry
- Honey or Sugar to Sweeten (if desired)
The kids had a great time building their own parfait and it was a quick and simple treat that could be done in a matter of minutes. I am also a huge fan of printables, so I had to find some that would be a good addition to the parfait. I found some on Pinterest from Elle + Bean and they worked like a charm. I simply printed them out on card-stock, cut them with my paper cutter and then taped them on some toothpicks (or a lollipop stick would work too).
